Ingredients
  

  • 1 cup crunchy peanut butter
  • 1 cup granulated sugar
  • 1 unit egg
  • 1 tsp vanilla extract
  • 3/4 cup Heath toffee bits
  • Extra granulated sugar for rolling

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a mixing bowl, combine 1 cup of crunchy peanut butter, 1 cup of granulated sugar, 1 egg, and 1 teaspoon of vanilla extract. Mix until smooth.
  4. Gently fold in 3/4 cup of Heath toffee bits into the dough.
  5. Scoop out portions of the dough, roll them into balls, then roll in granulated sugar before placing on the prepared baking sheet.
  6. Bake in the preheated oven for 10-12 minutes until edges are golden brown.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For a smoother texture, use creamy peanut butter instead of crunchy.
  • Store cookies in an airtight container for up to a week.
  • For longer storage, freeze cookies in a freezer-safe bag for up to three months.
