These French Toast Roll Ups are a fun twist on breakfast! Filled with cream cheese and strawberries, they're crispy, sweet, and simply irresistible.

Ingredients
  

For the Roll Ups:
  • 12 slices white sandwich bread crusts trimmed
  • 2 large eggs
  • ½ cup half-and-half or whole milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 cup granulated sugar
  • 3 tablespoons salted sweet cream butter for cooking
  • 8 ounces cream cheese softened
  • 4 tablespoons granulated sugar for filling
  • 5 to 6 ripe strawberries capped and sliced very thin

Method
 

Instructions
  1. Step 1: Prepare the Bread. Trim the crusts off each slice of bread and lightly flatten them with a rolling pin.
  2. Step 2: Make the Filling. Combine softened cream cheese with 4 tablespoons of sugar, mixing until smooth. Fold in sliced strawberries.
  3. Step 3: Assemble the Roll Ups. Spread the cream cheese mixture on one end of each slice and roll tightly, securing edges.
  4. Step 4: Prepare the Custard Mixture. Whisk together eggs, half-and-half, vanilla, cinnamon, and sugar until well combined.
  5. Step 5: Heat the Skillet. Melt butter in a skillet over medium heat until bubbly.
  6. Step 6: Dip and Cook the Roll Ups. Dip each roll-up in the custard mixture and cook seam side down for 2-3 minutes on each side until golden brown.
  7. Step 7: Serve and Enjoy. Remove from skillet, sprinkle with sugar or serve with syrup, whipped cream, or fruit.
