Ingredients

  • 15.25 ounces rainbow sprinkle cake mix (Funfetti, rainbow bits, or any white or yellow cake mix)
  • 1 teaspoon baking powder
  • 2 large eggs (room temperature)
  • 1/3 cup vegetable oil
  • 1 tablespoon pure vanilla extract
  • 1 cup rainbow sprinkles (plus a handful for the top)

Equipment

  • Mixing bowl
  • Measuring cups and spoons
  • Cookie sheet
  • Whisk or spatula
  • Oven

Method

  1. Start by preheating your oven to 350°F (175°C). This step is crucial for ensuring even baking.
  2. In a large mixing bowl, combine the cake mix and baking powder. Whisk them together until well blended.
  3. Next, add the room temperature eggs, vegetable oil, and pure vanilla extract to the dry mixture. Mix until everything is just combined and a dough forms. Be careful not to overmix, as this can result in tough cookies.
  4. Gently fold in the rainbow sprinkles, ensuring they are evenly distributed throughout the dough.
  5. Using a cookie scoop or tablespoon, drop rounded balls of dough onto a baking sheet lined with parchment paper. Make sure to leave enough space between each cookie, as they will spread while baking.
  6. For that extra festive touch, sprinkle a few additional rainbow sprinkles on top of each cookie before baking.
  7. Place the cookie sheet in the preheated oven and bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will firm up as they cool.
  8. Once baked, remove the cookies from the oven and let them cool on the cookie sheet for about 5 minutes. Then, transfer them to a wire rack to cool completely. Enjoy your Funfetti Cake Mix Cookies with a glass of milk or your favorite beverage!
