Ingredients
  

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup unsalted butter room temperature
  • 1 1/4 cups packed light brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 2 cups plain oat granola
  • 1/2 cup old-fashioned oats
  • 1 cup semi-sweet chocolate chips or chunks
  • 1/2 cup dried cherries coarsely chopped if large

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper.
  3. In a medium bowl, whisk together the all-purpose flour, salt, baking powder, and baking soda.
  4. In a large mixing bowl, cream together the unsalted butter, packed light brown sugar, and granulated sugar until light and fluffy (2-3 minutes).
  5. Beat in the eggs, one at a time, then mix in the vanilla extract.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in the oat granola, old-fashioned oats, semi-sweet chocolate chips, and dried cherries until well combined.
  8. Drop heaping tablespoons of dough onto the baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes.
  9. Cool the cookies on the baking sheets for about 5 minutes before transferring them to a cooling rack.

Notes

  • Store cookies in an airtight container at room temperature for up to a week.
  • Freeze cookies on a baking sheet, then transfer to a freezer-safe bag for up to three months.
  • Thaw at room temperature or microwave for a warm treat.
