Greek Lemon Potatoes Recipe

Ingredients
  

  • 1 cup chicken stock
  • 1/2 cup extra virgin olive oil
  • 1/4 cup lemon juice
  • 4 cloves garlic minced
  • 2 tsp dried oregano
  • 2 tsp fine sea salt
  • 2 tbsp unsalted butter to dot the top
  • 3 lbs Yukon Gold potatoes cut into quarters or 1-inch thick wedges
  • 1 tbsp parsley finely chopped for garnish

Method
 

  1. Preheat your oven to 425°F (220°C). This high temperature will help achieve that crispy exterior while keeping the insides tender and fluffy.
  2. Wash and peel the Yukon Gold potatoes. Cut them into quarters or wedges, ensuring they’re about the same size for even cooking.
  3. In a mixing bowl, combine the chicken stock, olive oil, lemon juice, minced garlic, dried oregano, and sea salt. Whisk until everything is well mixed.
  4. Place the cut potatoes in a large baking dish. Pour the marinade over the potatoes, ensuring they are well coated. Toss the potatoes gently with a spatula or spoon.
  5. Dot the top of the potatoes with small pieces of unsalted butter. This will enhance the flavor and help achieve a golden color.
  6. Place the baking dish in the preheated oven. Roast for about 45-55 minutes, or until the potatoes are golden brown and crispy, stirring halfway through to ensure even cooking.
  7. Once the potatoes are done, remove them from the oven. Sprinkle with finely chopped parsley for a fresh touch. Serve hot and enjoy the burst of Mediterranean flavors!

Notes

  • Leftover Greek Lemon Potatoes can be stored in an airtight container in the refrigerator for up to 4 days.
  • These potatoes can also be frozen for up to 3 months.
