  • 1 cup plain Greek yogurt (full fat or 2%)
  • 0.75 cup sugar
  • 3 large eggs
  • 2 lemons (zested)
  • 1 teaspoon vanilla extract
  • 0.5 cup coconut oil (melted)
  • 1.5 cups powdered sugar
  • 2 tablespoons fresh lemon juice

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease a standard 9x5-inch loaf pan with coconut oil or line it with parchment paper.

  9. Allow the loaf to cool in the pan for 10 minutes before transferring it to a cooling rack.
  10. In a medium bowl, whisk together powdered sugar and lemon juice to create the glaze.
  11. Drizzle the lemon glaze over the cooled loaf.
