Ingredients
  

  • 3 cups powdered sugar (sifted and divided)
  • 1 cup unsalted butter (softened)
  • 1 teaspoon clear vanilla extract
  • 2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • ½ teaspoon salt
  • ½ teaspoon liquid green food coloring (10 to 12 drops)
  • 1 cup mini semi-sweet chocolate chips
  • Large red heart sprinkles (for garnish)

Method
 

  1. Begin by preheating your oven to 350°F (175°C). This ensures that your cookies bake evenly.
  2. In a large mixing bowl, combine the softened unsalted butter and 1 cup of sifted powdered sugar. Using an electric mixer, cream them together on medium speed until light and fluffy, about 2-3 minutes.
  3. Mix in the clear vanilla extract and the liquid green food coloring. Adjust the amount of food coloring until you reach your desired shade of green.
  4. In another bowl, whisk together the all-purpose flour, cornstarch, and salt. Gradually add this dry mixture to the creamed butter mixture, mixing on low speed until just combined.
  5. Gently fold in the mini semi-sweet chocolate chips using a spatula, ensuring they are evenly distributed throughout the dough.
  6. Using a cookie scoop, portion out the dough onto a baking sheet lined with parchment paper. Be sure to leave space between each cookie as they will spread slightly while baking.
  7. Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers will look soft but will firm up as they cool.
  8. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack. Once completely cooled, roll the cookies in the remaining sifted powdered sugar.
  9. Finally, place a large red heart sprinkle on top of each cookie for a festive touch.
