Ingredients
  

For the Cake:
  • 3/4 cup coconut flour
  • 3/4 cup finely ground almond flour * Make sure to use finely ground almond flour for the best texture.
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 4 large eggs
  • 1/4 cup pure maple syrup or honey
  • 3/4 cup full-fat canned coconut milk
  • 1/4 cup coconut oil melted and cooled
  • 1 tsp pure vanilla extract
  • 2/3 cup fresh blueberries
  • 1 cup raw walnuts chopped
  • 3 Tbsp coconut oil melted
  • 2 Tbsp coconut sugar or pure maple syrup
  • 2 tsp ground cinnamon
  • 1 pinch sea salt

Method
 

Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: Grease your baking pan with coconut oil or line it with parchment paper.
  3. Step 3: In a large mixing bowl, whisk together the coconut flour, almond flour, baking soda, and sea salt until well combined.
  4. Step 4: In another bowl, beat the eggs and then add the maple syrup, coconut milk, melted coconut oil, and vanilla extract. Mix until smooth.
  5. Step 5: Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Step 6: Gently fold in the fresh blueberries and chopped walnuts using a rubber spatula.
  7. Step 7: In a small bowl, mix the melted coconut oil, coconut sugar, ground cinnamon, and a pinch of sea salt for the topping.
  8. Step 8: Pour the batter into the prepared baking pan and drizzle the topping mixture over the batter.
  9. Step 9: Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  10. Step 10: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
