Ingredients
  

For the Casserole:
  • 1 tablespoon Olive oil spray to coat the baking dish and prevent sticking
  • 1 teaspoon Olive oil for sautéing shallots
  • 3 Shallots, chopped for a hint of sweetness
  • 6 ounces Baby spinach packed with vitamins
  • 24 Large eggs, beaten main protein source
  • 2 cups 2% milk adds creaminess
  • 1/2 cup Heavy cream for extra richness
  • 12 ounces Feta cheese, crumbled provides a salty flavor
  • 3 Scallions, chopped for a fresh bite
  • 3 Plum tomatoes, seeded and diced adds freshness
  • 2 1/2 teaspoons Kosher salt enhances flavors
  • Black pepper to taste

Method
 

Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a skillet, heat 1 teaspoon of olive oil over medium heat. Add the chopped shallots and sauté for about 3-4 minutes until translucent.
  3. Step 3: Add the baby spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  4. Step 4: In a large mixing bowl, whisk together the beaten eggs, milk, and heavy cream. Season with kosher salt and black pepper.
  5. Step 5: Add the cooked shallots and spinach to the egg mixture. Fold in the crumbled feta, chopped scallions, and diced tomatoes.
  6. Step 6: Lightly spray your baking dish with olive oil spray. Pour the egg mixture into the prepared dish.
  7. Step 7: Place in the preheated oven and bake for 40-45 minutes until the casserole is set and lightly golden on top.
  8. Step 8: Let cool for a few minutes, cut into squares, and serve warm.

Notes

  • Thoroughly beat the eggs for a fluffy texture.
  • Do not overcrowd the skillet when sautéing.
  • Let the casserole cool slightly before cutting.
