Cooking Healthy Chicken Salad Sliders: The Process
- Start by gathering all your ingredients. If you're using rotisserie chicken, shred and chop it into bite-sized pieces. Next, cube the Granny Smith apples and halve the grapes.
- In a large mixing bowl, combine the shredded chicken, cubed apples, halved grapes, slivered almonds, and dried cranberries. Sprinkle in the garlic salt, and season with salt and pepper to taste.
- Spoon in the plain Greek yogurt and mix everything together until the ingredients are well-coated.
- Slice your whole wheat or pretzel buns in half. Spoon a generous amount of the chicken salad mixture onto the bottom half of each bun.
- Arrange the sliders on a serving platter and enjoy them right away!
Notes
- For a nut-free option, omit the slivered almonds or substitute with sunflower seeds.
- To reduce carbs, serve the chicken salad in lettuce wraps instead of buns.
- For a vegan option, use shredded jackfruit instead of chicken and plant-based yogurt instead of Greek yogurt.
