How to Prepare:
  1. Step 1: Preheat the Oven - Start by preheating your oven to 350°F (175°C).
  2. Step 2: Prepare the Cake Pans - Grease your 9-inch round cake pans with coconut oil or line them with parchment paper.
  3. Step 3: Mix the Wet Ingredients - In a large mixing bowl, combine melted coconut oil and dark brown sugar. Whisk until well blended, then add eggs and vanilla extract, mixing until smooth.
  4. Step 4: Combine the Dry Ingredients - In another bowl, whisk together whole-wheat flour, baking soda, cinnamon, and salt.
  5. Step 5: Combine Everything Together - Gradually add dry ingredients to wet mixture, alternating with Greek yogurt and almond milk. Mix until just combined.
  6. Step 6: Fold in the Bananas - Gently fold in smashed ripe bananas until evenly distributed.
  7. Step 7: Bake the Cake - Divide the batter between prepared pans and smooth the tops. Bake for 25-30 minutes.
  8. Step 8: Cool the Cake - Allow cakes to cool in pans for about 10 minutes, then transfer to a cooling rack to cool completely.

  10. Step 10: Frost the Cake - Place one layer on a serving plate, spread frosting on top, then place the second layer and frost the top and sides.
