Baking Instructions
- Step 1: Preheat your oven to 350°F (175°C) for even baking.
- Step 2: Grease the 9-inch round cake pans with vegetable oil or non-stick spray. Line with parchment paper.
- Step 3: In a large bowl, combine sugar, flour, cocoa powder, baking powder, baking soda, and salt. Whisk until blended.
- Step 4: Add milk, eggs, vegetable oil, and vanilla. Mix on medium speed for about 2 minutes until smooth.
- Step 5: Carefully stir in boiling water. The batter will be thin, which makes the cake moist!
- Step 6: If using coffee crystals, dissolve them in boiling water before adding to the batter.
- Step 7: Pour batter into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
- Step 8: Cool cakes in pans for 10 minutes, then transfer to a cooling rack to cool completely.
- Step 9: Prepare your favorite frosting while the cakes cool. Chocolate buttercream is a great choice.
