Ingredients
  

  • 1 tablespoon sesame oil
  • 1 yellow onion chopped
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 6 ounces green beans chopped into 1-inch pieces
  • 3-4 tablespoons hoisin sauce or to taste
  • 1 cup wild rice
  • Salt to taste
  • 1 pound turkey or chicken breasts chopped into bite-sized pieces
  • 1/4 cup soy sauce or liquid aminos
  • 2 teaspoons white vinegar
  • 1 teaspoon sesame seed oil
  • 2 tablespoons unsalted, unsweetened peanut butter
  • 1 tablespoon honey
  • 1/8 teaspoon garlic powder
  • 1-2 teaspoons sriracha or other chili sauce or more, to taste

Method
 

  1. Start by cooking the wild rice according to package instructions. This usually takes about 45-50 minutes, so it’s best to get this going first. Once it’s tender and fluffy, set it aside.
  2. In a large wok or skillet, heat the sesame oil over medium-high heat. Add the chopped yellow onion and sauté for 2-3 minutes until it begins to soften. Then, toss in the red and green bell peppers along with the green beans. Stir-fry for about 5-7 minutes, or until the vegetables are slightly tender but still crisp.
  3. Next, add the chopped turkey to the skillet. Since the turkey is already cooked, you only need to heat it through, which should take about 2-3 minutes.
  4. In a small bowl, whisk together the hoisin sauce, soy sauce, white vinegar, sesame seed oil, peanut butter, honey, garlic powder, and sriracha. Adjust the amounts to your taste; if you like it sweeter, add more honey, or if you want it spicier, increase the sriracha. Pour this sauce over the turkey and vegetables, stirring well to ensure everything is coated evenly. Cook for another 2-3 minutes until everything is heated through.
  5. To serve, spoon a generous amount of wild rice into bowls and top it with the hoisin turkey stir fry. You can garnish with chopped green onions or sesame seeds for an extra touch. Enjoy your flavorful and colorful meal!
