Ingredients
  

  • 2-1/2 to 3 cups bread flour or all-purpose flour measured using the spoon-and-level method
  • 2-1/4 teaspoons active dry yeast (1 packet)
  • 2 tablespoons honey or granulated sugar divided
  • 1 cup warm water (105 to 110 degrees F)
  • 3 tablespoons unsalted butter divided (plus additional for pan)
  • 1-1/2 teaspoons table salt
  • 3 tablespoons dry milk powder

Method
 

  1. 1. Activate the Yeast: In a small bowl, combine 1/4 cup of warm water (105 to 110 degrees F) with 2 tablespoons of honey or sugar. Sprinkle the active dry yeast over the water and let it sit for about 5-10 minutes until it becomes foamy.
  2. 2. Mix the Dough: In a large mixing bowl, combine 2 cups of flour, dry milk powder, and salt. Create a well in the center and add the yeast mixture, the remaining 3/4 cup of warm water, and 2 tablespoons of melted butter. Mix with a wooden spoon or spatula until a shaggy dough forms.
  3. 3. Knead the Dough: Transfer the dough to a lightly floured surface. Knead the dough for about 8-10 minutes, adding flour as necessary, until it is smooth and elastic. You can also use a stand mixer with a dough hook for this step.
  4. 4. First Rise: Shape the dough into a ball and place it in a greased bowl, turning to coat. Cover with a kitchen towel and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
  5. 5. Shape the Loaf: Once risen, punch down the dough gently to release the air. Transfer it to a floured surface and shape it into a loaf. Place the shaped dough into a greased loaf pan.
  6. 6. Second Rise: Cover the loaf with a towel and let it rise for another 30-45 minutes, until it has risen just above the rim of the pan.
  7. 7. Preheat the Oven: About 20 minutes before baking, preheat your oven to 350 degrees F.
  8. 8. Bake the Bread: Once your oven is hot, bake the bread for 30-35 minutes, or until the top is golden brown and sounds hollow when tapped. If the top browns too quickly, tent it with foil.
  9. 9. Cool Down: Remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.

Notes

  • Store the bread at room temperature in a bread box or wrapped in a kitchen towel for up to 3 days.
  • You can wrap it tightly in plastic wrap or aluminum foil and freeze it for up to 3 months.
  • For frozen bread, thaw it at room temperature or pop it directly into the toaster for a quick warm-up.
