Method
 

  1. Start by preheating your oven to 325°F (163°C). A hot oven is essential for achieving that perfect crunch.
  2. Line a large baking sheet with parchment paper. This will help prevent the granola from sticking and make for easy cleanup.
  3. In a large mixing bowl, combine the rolled oats, chopped almonds, ground flax seeds, and fine sea salt. Stir these dry ingredients together until well mixed.
  4. In a separate bowl, whisk together the melted coconut oil, honey, light-brown sugar, vanilla extract, almond extract, and the egg white until well combined.
  5. Pour the wet mixture over the dry ingredients. Using a rubber spatula, stir everything together until the oats and nuts are evenly coated.
  6. Spread the granola mixture evenly on the prepared baking sheet. Press it down gently with the spatula to encourage clumping.
  7. Place the baking sheet in the preheated oven and bake for 25-30 minutes, stirring halfway through to ensure even browning. Keep an eye on it to prevent burning.
  8. Once golden brown, remove the granola from the oven and let it cool completely on the baking sheet. This cooling time is crucial for achieving crunchy clusters. Once cooled, store it in an airtight container.
