Cooking Instructions:
  1. Step 1: Prepare the Marinade - In a mixing bowl, combine the Jamaican jerk seasoning, honey, fresh thyme leaves, olive oil, and orange zest. Mix well until everything is thoroughly combined.
  2. Step 2: Marinate the Lamb - Place the lamb rib chops in a large resealable bag or shallow dish. Pour the marinade over the chops, ensuring they are well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, ideally overnight for maximum flavor.
  3. Step 3: Preheat the Grill - Preheat your grill or grill pan over medium-high heat.
  4. Step 4: Cook the Lamb Chops - Remove the lamb chops from the marinade, allowing any excess to drip off. Place the chops on the grill and cook for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness. Use a meat thermometer to check; the internal temperature should be 145°F for medium-rare.
  5. Step 5: Rest the Chops - Once cooked, remove the lamb chops from the grill and let them rest for about 5 minutes.
  6. Step 6: Serve and Enjoy - Drizzle the lamb chops with additional honey and garnish with fresh thyme. Serve with orange wedges on the side.
