Ingredients

  • 2 cups cooked chicken like rotisserie, chopped into small pieces
  • 1/3 cup dried cranberries fruit-infused for an even more delicious chicken salad!
  • 2 stalks celery thinly sliced
  • 1/2 cup prepared coleslaw dressing found near chilled dressings/dips in the grocery store; I like Marie's brand
  • 1 tablespoon yellow mustard
  • 3 tablespoons honey BBQ sauce
  • Salt and pepper to taste
  • Bread or croissant rolls
  • Lettuce

Equipment

  • Mixing bowl
  • Spatula
  • Knife
  • Cutting board
  • Serving platter

Method

  1. Start by shredding or chopping your cooked chicken into small, bite-sized pieces. If you're using rotisserie chicken, you can easily pull the meat off the bones and chop it up.
  2. In a mixing bowl, combine the chopped chicken, dried cranberries, and thinly sliced celery. This mix will serve as the foundation of your chicken salad.
  3. To the chicken mixture, add the prepared coleslaw dressing, yellow mustard, and honey BBQ sauce. Stir gently until everything is well coated and incorporated.
  4. Taste the chicken salad and season with salt and pepper to your liking. This step is crucial to ensure that all the flavors come together harmoniously.
  5. Take your choice of bread or croissant rolls and layer some fresh lettuce on the bottom. Spoon a generous amount of the honey mustard chicken salad over the lettuce, then top with the other half of the bread or croissant.
  6. Slice your sandwiches in half, serve with a side of your favorite chips or a crisp salad, and enjoy the delightful flavors of your homemade Honey Mustard Chicken Salad Sandwiches.

Notes

  • For best results, prepare the chicken salad in advance and let it chill in the fridge for at least an hour before serving to allow the flavors to meld together.
  • When packing for lunch, consider placing the chicken salad in a separate container from the bread to prevent it from getting soggy.
  • If your chicken salad is too dry, add a bit more coleslaw dressing or honey BBQ sauce to achieve a creamier consistency.
