Ingredients
  

For the Toast:
  • 2 slices whole grain bread (toasted, 1 oz each)
  • 2 tbsp hummus (store-bought or homemade)
  • 6 slices cucumber (thin)
  • 1 small radish (sliced thin)
  • 1 oz avocado (sliced thin, from 1/4 small Haas)
  • crushed red pepper flakes (optional)
  • 1/8 tsp kosher salt
  • black pepper (freshly cracked)
  • 1/4 cup baby arugula
  • 1 wedge fresh lemon (for squeezing)
  • everything bagel seasoning (optional)

Method
 

Instructions:
  1. Start by toasting your slices of whole grain bread until they are golden brown and crispy. This adds a delightful crunch to your toast.
  2. Once your bread is toasted, generously spread 1 tablespoon of hummus on each slice. Use the back of a spoon to create an even layer.
  3. Carefully place the thin avocado slices on top of the hummus. You can fan them out or layer them, depending on your preference.
  4. Now it’s time to add the cucumber slices and radish on top of the avocado. Arrange them as you like for an appealing presentation.
  5. Sprinkle the toast with kosher salt and black pepper to taste. If you enjoy a bit of heat, add crushed red pepper flakes as well.
  6. Add a handful of baby arugula on top of your toast. This not only adds flavor but also a lovely pop of color.
  7. Squeeze a wedge of fresh lemon over the top of your toast for a zesty finish. If you like, you can also sprinkle everything bagel seasoning for extra crunch and flavor.

  • For the best flavor, choose ripe avocados that yield slightly to pressure.
  • Experiment with different hummus flavors to switch things up.
  • Add toppings like sliced cherry tomatoes or feta cheese for extra flavor.
  • If you prefer a spicier kick, consider adding sliced jalapeños.
