Ingredients

For the Chicken:
  • 1.5 lbs chicken drumsticks
  • 0.5 tablespoon Italian seasoning
  • 3 dashes paprika
  • 0.25 teaspoon salt
  • 3 dashes ground black pepper
  • 0.5 tablespoon olive oil
  • 1 head garlic peeled and pounded
  • 1 teaspoon lemon juice
  • 2 sprigs oregano chopped

Equipment

  • Large mixing bowl
  • Baking sheet
  • Parchment paper
  • Meat thermometer
  • Garlic press
  • Cooking brush

Method

Cooking Instructions:
  1. Step 1: Prepare the Marinade. In a large mixing bowl, combine the olive oil, Italian seasoning, paprika, salt, black pepper, lemon juice, and the pounded garlic. Mix well to create a fragrant marinade that will coat the chicken.
  2. Step 2: Marinate the Chicken. Add the chicken drumsticks to the bowl with the marinade. Use your hands to ensure that each piece is thoroughly coated in the flavorful mixture. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for maximum flavor.
  3. Step 3: Preheat the Oven. Preheat your oven to 425°F (220°C). This high temperature will help achieve that crispy skin we all love.
  4. Step 4: Arrange the Chicken on the Baking Sheet. Line a baking sheet with parchment paper for easy cleanup. Place the marinated chicken drumsticks on the baking sheet, spacing them out to allow for even cooking. Sprinkle the chopped oregano over the top for an extra burst of flavor.
  5. Step 5: Roast the Chicken. Put the baking sheet in the preheated oven and roast the chicken for about 35-40 minutes, or until the internal temperature reaches 165°F (74°C). Halfway through the cooking time, you might want to turn the chicken for an even crisp.
  6. Step 6: Serve and Enjoy. Once the chicken is beautifully golden and cooked through, remove it from the oven. Let it rest for a few minutes before serving. This resting period allows the juices to redistribute, ensuring each bite is juicy and flavorful.

Notes

  • For extra crispy skin, pat the chicken dry before marinating.
  • Add red pepper flakes for a spicy kick.
  • Bone-in skin-on thighs can add more flavor and moisture.
