In another bowl, cream the coconut oil, light brown sugar, and granulated sugar until light and fluffy.
Add the egg and vanilla extract to the creamed mixture, beating until well combined.
Gradually add the dry flour mixture to the wet mixture, stirring gently until just combined.
Fold in the sliced almonds until evenly distributed throughout the dough.
Press half of the crumb mixture into the bottom of the prepared baking pan, spread the fruit jam over the top, then sprinkle the remaining crumb mixture over the jam layer.
Bake in the preheated oven for about 25-30 minutes, or until the top is golden and the edges are set.
Allow the bars to cool in the pan for about 10 minutes before transferring them to a cooling rack. Once cooled, slice into squares or rectangles.
