Ingredients
  

  • 2 lbs ground beef (80/20)
  • 1 medium onion, grated or finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/4 cup sugar-free ketchup
  • 1/4 cup milk of choice (unsweetened coconut milk recommended)
  • 2 tablespoons freshly chopped parsley
  • 3/4 cup keto bread crumbs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3/4 cup sugar-free ketchup for glaze
  • 1 1/2 teaspoons white vinegar
  • 2 1/2 tablespoons brown sugar substitute

Method
 

  1. Preheat your oven to 350°F (175°C). This ensures a perfectly cooked meatloaf with a lovely crust.
  2. In a large mixing bowl, combine the ground beef, grated onion, minced garlic, eggs, sugar-free ketchup, milk, parsley, keto bread crumbs, salt, and pepper. Use your hands or a spatula to mix the ingredients thoroughly, ensuring everything is evenly distributed.
  3. Transfer the meat mixture into a loaf pan, shaping it into a loaf form. This allows for even cooking and presentation.
  4. In a separate bowl, whisk together the sugar-free ketchup, white vinegar, and brown sugar substitute. This will be your delicious glaze that adds flavor and moisture.
  5. Spread the ketchup glaze evenly over the top of the meatloaf. This step adds a burst of flavor and a beautiful finish.
  6. Place the loaf pan in the preheated oven and bake for about 60 minutes or until the internal temperature reaches 160°F (70°C).
  7. Once done, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. This helps the juices redistribute, keeping the meatloaf moist.

Notes

  • Do not overmix the meat mixture; this can lead to a dense meatloaf.
  • For enhanced flavor, consider adding some Worcestershire sauce to the meat mixture.
  • Using a meat thermometer is the best way to ensure your meatloaf is perfectly cooked without overcooking.
