Ingredients

  • 1 cup peanut butter
  • ½ cup unsalted butter
  • cup powdered sweetener (Allulose is best, but any powdered sweetener works)
  • ½ cup whey protein powder
  • 1 teaspoon vanilla extract (optional)
  • a pinch salt (if your peanut butter is unsalted)

Equipment

  • Mixing bowl
  • Spatula
  • 9x9-inch baking pan
  • Refrigerator

Method

  1. In a medium saucepan over low heat, add the unsalted butter. Allow it to melt completely, stirring occasionally to ensure it doesn’t burn.
  2. Once the butter is melted, add the peanut butter to the saucepan. Stir until the mixture is completely combined and smooth.
  3. Next, sift in the powdered sweetener. Stir well to ensure the sweetener is fully incorporated into the peanut butter and butter mixture.
  4. Sprinkle the whey protein powder into the mixture. Stir continuously until everything is evenly mixed, and you achieve a creamy consistency.
  5. If desired, add the vanilla extract and a pinch of salt (if your peanut butter is unsalted). Mix thoroughly to combine all flavors.
  6. Pour the fudge mixture into the prepared 9x9-inch baking pan. Use a spatula to spread it evenly. Place the pan in the refrigerator for about 2-3 hours or until the fudge is firm.
  7. Once set, remove the fudge from the refrigerator and cut it into squares. Enjoy this delightful Keto Peanut Butter Fudge as a snack or dessert!

Notes

  • Ensure your peanut butter is creamy and free of added sugars for the best results.
  • For a smoother texture, sift the powdered sweetener before combining.
  • Allow the fudge to set completely for perfect consistency.
