Instructions:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the cubed chicken with salt and lemon pepper, coating it evenly.
- In the casserole dish, combine the chicken, chicken broth, rice, lemon juice, melted butter, lemon zest, garlic, onion powder, salt, basil, pepper, and thyme. Stir until well mixed.
- Place thin slices of lemon on top of the mixture.
- Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes.
- Let sit for a few minutes before serving.
Notes
- Allow the casserole to cool completely before storing in an airtight container.
- Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
