Ingredients
  

For the Casserole:
  • 1 pound cubed boneless skinless chicken breast
  • 1 teaspoon salt
  • 2 teaspoons lemon pepper
  • 2 cups chicken broth
  • 1 cup white rice
  • 3 tablespoons lemon juice
  • 3 tablespoons melted butter
  • 1 tablespoon lemon zest
  • 1 tablespoon minced garlic
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 1 teaspoon pepper
  • 1 teaspoon thyme
  • 1 thin slices from lemon

Equipment

  • Large casserole dish
  • Measuring cups and spoons
  • Mixing bowl
  • Wooden spoon or spatula
  • Oven mitts

Method
 

Instructions:
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the cubed chicken with salt and lemon pepper, coating it evenly.
  3. In the casserole dish, combine the chicken, chicken broth, rice, lemon juice, melted butter, lemon zest, garlic, onion powder, salt, basil, pepper, and thyme. Stir until well mixed.
  4. Place thin slices of lemon on top of the mixture.
  5. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes.
  6. Let sit for a few minutes before serving.

Notes

  • Allow the casserole to cool completely before storing in an airtight container.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
  • Consider using turkey or tofu as a protein alternative.
