Loaded Soft and Chewy M&M Cookie Pie

This Loaded Soft and Chewy M&M Cookie Pie is an absolute treat! Warm, gooey, and loaded with candies, it's perfect for any occasion!

Ingredients
  

  • 1 cup unsalted butter melted
  • 1 large egg
  • 1 cup light brown sugar packed
  • 1 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 pinch salt optional and to taste
  • 1 cup semi-sweet chocolate chips
  • 1 cup M&M's divided (you can use plain, peanut, peanut butter, dark, etc.)
  • 6 mini peanut butter cups
  • 6 Rolos or other mini/bite-size candy bars

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease your 9-inch pie dish lightly with butter or non-stick spray.
  3. In a large mixing bowl, combine the melted unsalted butter, light brown sugar, and granulated sugar. Whisk until smooth and creamy. Add in the large egg and vanilla extract, mixing until fully incorporated.
  4. In another bowl, whisk together the all-purpose flour and a pinch of salt (if using). Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Gently fold in the semi-sweet chocolate chips, half of the M&M's, mini peanut butter cups, and Rolos.
  6. Spoon the cookie dough into the prepared pie dish, spreading it out evenly. Sprinkle the remaining M&M's on top.
  7. Place the pie dish in the preheated oven and bake for 25-30 minutes, or until the edges are golden and the center is set but still soft.
  8. Once baked, let the cookie pie cool in the dish for about 10 minutes. Slice into wedges and serve warm.

Notes

  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • For longer storage, refrigerate the pie for up to a week.
  • You can freeze the cookie pie; wrap slices tightly and defrost in the fridge before enjoying.
