  • 2 teaspoons Cornstarch
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1 cup Granulated Sweetener of Choice
  • 1/2 cup Unsweetened Applesauce
  • 1/4 cup Coconut Oil melted
  • 1 teaspoon Vanilla Extract
  • 1 cup Chocolate Chips of Choice

Method
 

Stepwise Method:
  1. Preheat your oven to 350°F (175°C). This ensures that your cookies bake evenly.
  2. In a large mixing bowl, whisk together the white whole wheat flour, cornstarch, baking soda, baking powder, and salt until well combined.
  3. In another bowl, mix the granulated sweetener, unsweetened applesauce, melted coconut oil, and vanilla extract until smooth.
  4. Gradually add the wet mixture to the dry ingredients, stirring until just combined. Be careful not to overmix.
  5. Gently fold in the chocolate chips, distributing them evenly throughout the dough.
  6. Using a cookie scoop or tablespoon, drop rounded balls of dough onto a lined baking sheet, spacing them about 2 inches apart.
  7. Place the baking sheet in the preheated oven and bake for 10-12 minutes or until the edges are golden brown. The centers may look slightly underbaked, but they will firm up as they cool.
  8. Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely.

Notes

  • For a richer flavor, consider adding a pinch of cinnamon or nutmeg to the dry ingredients.
  • These cookies freeze well! Place them in an airtight container or freezer bag for up to 3 months.
  • If you prefer a crunchier cookie, extend the baking time by a couple of minutes.
