  • 1 tablespoon cilantro stems juice adds freshness
  • 1 tablespoon shrimp sauce key ingredient
  • 1/2 tablespoon sugar balances flavors
  • 1/2 tablespoon sesame oil adds richness
  • 1 tablespoon corn starch for crispy texture
  • 3 tablespoons all-purpose flour forms the coating base

Method
 

Instructions:
  1. In a mixing bowl, combine the chicken drumsticks with cilantro stems juice, shrimp sauce, sugar, and sesame oil. Mix well and let marinate for at least 30 minutes.
  2. In another bowl, whisk together the egg white, corn starch, and all-purpose flour to create the coating mixture.
  3. In a deep fryer or large pot, heat oil over medium-high heat to about 350°F (175°C). Test the oil readiness with a small amount of the coating mixture.
  4. Dredge the marinated chicken in the coating mixture, ensuring a generous layer sticks to the surface.
  5. Carefully place the coated chicken into the hot oil and fry in batches for 8-10 minutes until golden brown.
  6. Once fried, serve the chicken hot with your favorite dipping sauce or a fresh salad.

Notes

  • For extra flavor, marinate the chicken for up to 2 hours.
  • Make sure the oil is hot enough to avoid sogginess.
  • Store leftovers in an airtight container for up to 3 days.
