  • ½ cup heavy cream
  • ½ cup Parmesan grated

  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon lemon zest
  • to taste Fresh basil for garnish

Equipment

  • Skillet
  • Spatula
  • Measuring cups and spoons
  • Cutting board

Method

Cooking Instructions:
  1. Step 1: Prepare the Salmon - Pat the salmon fillets dry with a paper towel. Drizzle olive oil on both sides, then sprinkle with Italian seasoning, salt, and pepper.
  2. Step 2: Sear the Salmon - In a large skillet, heat over medium-high heat. Add the seasoned salmon fillets, sear for 4-5 minutes until golden brown, then flip and cook for another 3-4 minutes. Remove from skillet and set aside.
  3. Step 3: Make the Creamy Sauce - In the same skillet, reduce heat to medium, add butter, and allow to melt. Add minced garlic and sauté for 30 seconds. Whisk in flour and cook for 1 minute.
  4. Step 4: Add the Broth and Cream - Gradually pour in chicken broth while whisking. Add heavy cream, stirring until smooth and thickened.
  5. Step 5: Incorporate Parmesan and Sun-Dried Tomatoes - Stir in Parmesan, sun-dried tomatoes, another teaspoon of Italian seasoning, and lemon zest. Simmer for a couple of minutes.
  6. Step 6: Return the Salmon to the Skillet - Gently place salmon back in the skillet, spooning sauce over the top. Cook for an additional 2-3 minutes.
  7. Step 7: Garnish and Serve - Plate the salmon, spooning over remaining sauce. Garnish with fresh basil and serve immediately.

Notes

  • Ensure the salmon is at room temperature for even cooking.
  • Don’t rush the searing process; a good sear adds flavor.
  • Taste the sauce as you go, adjusting seasoning as necessary.
