Ingredients
  

  • 120 g butter
  • 150 g dark chocolate
  • 150 g sugar
  • 50 g cocoa powder
  • 125 g mascarpone cheese
  • 3 eggs
  • 1/2 vanilla pod
  • 70 g flour
  • a pinch salt
  • 100 g dark chocolate (for topping)
  • 50 g heavy whipping cream
  • 125 g mascarpone cheese (for whipped cream)
  • 200 ml whipping cream
  • 2 tbsp vanilla sugar

Method
 

  1. Step 1: Preheat your oven to 180°C (350°F) and line your baking pan with parchment paper.
  2. Step 2: Melt the butter and dark chocolate together in a double boiler or microwave-safe bowl, stirring until smooth.
  3. Step 3: In a separate bowl, whisk together the sugar, cocoa powder, flour, and a pinch of salt.
  4. Step 4: Combine the melted chocolate mixture with the dry ingredients, mixing well. Add eggs one at a time, followed by mascarpone and vanilla seeds.
  5. Step 5: Pour the batter into the prepared pan and bake for 25-30 minutes until a toothpick comes out with a few moist crumbs.
  6. Step 6: Prepare the chocolate ganache by melting dark chocolate with heavy whipping cream in a small saucepan.
  7. Step 7: Beat the whipping cream until soft peaks form, then add mascarpone and vanilla sugar, whipping until stiff peaks form.
  8. Step 8: Once brownies are cooled, drizzle with ganache and top with the mascarpone whipped cream.
  9. Step 9: Chill in the refrigerator for at least 30 minutes before serving.

  • For a dairy-free option, substitute coconut oil for butter.
  • Use a sugar alternative for a lower-calorie version.
  • Keep the whipped cream separate until serving for best texture.
