Step 1: Preheat your oven to 180°C (350°F) and line your baking pan with parchment paper.
Step 2: Melt the butter and dark chocolate together in a double boiler or microwave-safe bowl, stirring until smooth.
Step 3: In a separate bowl, whisk together the sugar, cocoa powder, flour, and a pinch of salt.
Step 4: Combine the melted chocolate mixture with the dry ingredients, mixing well. Add eggs one at a time, followed by mascarpone and vanilla seeds.
Step 5: Pour the batter into the prepared pan and bake for 25-30 minutes until a toothpick comes out with a few moist crumbs.
Step 6: Prepare the chocolate ganache by melting dark chocolate with heavy whipping cream in a small saucepan.
Step 7: Beat the whipping cream until soft peaks form, then add mascarpone and vanilla sugar, whipping until stiff peaks form.
Step 8: Once brownies are cooled, drizzle with ganache and top with the mascarpone whipped cream.
Step 9: Chill in the refrigerator for at least 30 minutes before serving.
