  • 1 tsp taco seasoning for that authentic Mexican flavor
  • 2 cups chopped cooked chicken the star protein of the dish
  • 2 cups cooked Mexican or Spanish rice for a flavorful base
  • 2 cups chicken broth adds moisture and depth
  • Black pepper to taste

Method
 

  1. Step 1: Preheat the Oven. Begin by preheating your oven to 375°F (190°C). This ensures that your cobbler bakes evenly and comes out perfectly golden.
  2. Step 2: Prepare the Base. In your mixing bowl, combine the chopped cooked chicken and the cooked Mexican or Spanish rice. Pour in the chicken broth, mixing well to ensure everything is evenly coated. Season with black pepper to taste. Transfer this mixture to your greased 9x13 inch baking dish, spreading it out evenly.
  3. Step 3: Make the Cobbler Topping. In another mixing bowl, whisk together the all-purpose flour, baking powder, salt, and taco seasoning. In a separate bowl, melt the butter and then add the milk. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are perfectly fine!
  4. Step 4: Top the Chicken & Rice Mixture. Spoon the cobbler topping over the chicken and rice mixture in the baking dish. Use a spatula to spread it gently, ensuring that the filling is mostly covered by the batter.
  5. Step 5: Bake. Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the topping is golden brown and a toothpick inserted into the cobbler comes out clean.
