Mexican Meatloaf

This Mexican Meatloaf is bursting with flavor! A delightful twist on a classic, it's perfect for weeknight dinners and meal prep.

Ingredients
  

  • 2 pounds lean ground beef
  • ¾ cup whole milk
  • 2 large eggs
  • 1 packet taco seasoning (about 1 ounce)
  • 1 cup white onion finely chopped
  • 4 ounces green chiles drained
  • 1 cup crushed tortilla chips
  • 2 teaspoons minced garlic
  • 1 ½ cups grated cheddar jack cheese (divided into 1 cup and ½ cup)
  • 1 cup salsa (divided in half)
  • Chopped cilantro (for garnish)

Method
 

  1. Preheat your oven to 350°F (175°C) to ensure even cooking.
  2. In a large mixing bowl, combine the lean ground beef, whole milk, eggs, and taco seasoning.
  3. Add the chopped onion, drained green chiles, crushed tortilla chips, minced garlic, and 1 cup of cheddar jack cheese to the bowl.
  4. Mix all the ingredients together until well combined, being careful not to overwork the meat.
  5. Transfer the mixture to a loaf pan, gently pressing it into shape.
  6. Spread half of the salsa over the top of the meatloaf, then sprinkle with the remaining ½ cup of cheddar jack cheese.
  7. Bake in the preheated oven for 1 hour or until the internal temperature reaches 160°F (70°C).
  8. Remove from the oven and let it rest for about 10 minutes. Garnish with chopped cilantro before serving.

Notes

  • Mix in a tablespoon of Worcestershire sauce for added moisture.
  • Allow the meatloaf to rest before slicing to retain its juices.
  • Add diced jalapeños or hot sauce for a spicier version.
