Mexican Tortilla Roll Ups

Ingredients
  

  • 8 ounces cream cheese softened
  • 8 ounces sour cream
  • 1 cup shredded cheddar cheese (4 ounces, see note 1)
  • 1 can diced green chiles (4-ounce, drained)
  • 1/2 cup pitted black olives chopped (see note 2)
  • 1/2 cup green onions sliced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon seasoned salt (see note 3)
  • 8 tortillas flour tortillas (8-inch, see note 4)

Method
 

  1. In a large mixing bowl, combine the softened cream cheese, sour cream, and shredded cheddar cheese. Stir well until smooth and creamy.
  2. To the cheese mixture, add the diced green chiles, chopped black olives, sliced green onions, garlic powder, and seasoned salt. Mix until all ingredients are fully incorporated and the mixture is well combined.
  3. Lay one tortilla flat on a clean surface. Spread a generous layer of the cheese mixture evenly over the tortilla, leaving about half an inch from the edges.
  4. Starting from one edge of the tortilla, carefully roll it up tightly. Make sure the filling stays inside as you roll. Repeat this process with the remaining tortillas and cheese mixture.
  5. Wrap each rolled tortilla in plastic wrap and place them in the refrigerator for at least 1 hour. This helps the flavors meld together and makes slicing easier.
  6. Once chilled, remove the plastic wrap and place the roll-ups on a cutting board. Use a sharp knife to slice the rolls into bite-sized pieces, about 1 to 1.5 inches thick. Arrange them on a platter and serve!

Notes

  • Store leftovers in an airtight container in the refrigerator for 3-5 days.
  • For a gluten-free option, use gluten-free tortillas.
  • You can make these roll-ups a day in advance; just keep them tightly wrapped in the refrigerator.
