Ingredients

For the Tostadas:
  • 2 pieces Mission Carb Balance low-carb tortillas
  • 2 tsp olive oil
  • 1/2 cup very finely chopped lettuce
  • 1/4 cup finely crumbled feta
  • 10 pieces Kalamata olives, finely chopped (or regular black olives)
  • 1/2 cup hummus
  • Powdered sumac for sprinkling (optional)

Equipment

  • Non-stick skillet
  • Cutting Board and Knife
  • Measuring cups and spoons
  • Spatula

Method

Cooking Instructions:
  1. Step 1: Prepare the Tortillas - Start by heating your non-stick skillet over medium heat. Add the olive oil and let it heat for a minute.
  2. Step 2: Crisp the Tortillas - Once the oil is hot, place one tortilla in the skillet and cook for about 2-3 minutes on each side or until golden brown and crispy. Repeat with the second tortilla. Remove from the skillet and place on a paper towel to absorb any excess oil.
  3. Step 3: Assemble the Tostadas - Spread a generous layer of hummus over each crispy tortilla.
  4. Step 4: Add Fresh Toppings - Sprinkle the finely chopped lettuce evenly over the hummus, followed by the crumbled feta and chopped olives.
  5. Step 5: Finish with Seasoning - If you're using powdered sumac, sprinkle it over the top for an added layer of flavor.
  6. Step 6: Serve Immediately - Slice your tostadas into wedges and serve them fresh for the best texture and flavor.

Notes

  • Chop vegetables a day in advance and store in airtight containers.
  • For a vegan option, substitute feta with vegan cheese or omit it.
  • Reheat leftover tostadas in a skillet to restore crispiness.
