Moroccan Salmon Foil Packets with Carrot Noodles and Chickpeas

Ingredients
  

For the Salmon Packets:
  • 4 6 oz salmon fillets fresh or frozen, thawed
  • 2 large carrots peeled and spiralized
  • 1 can chickpeas 14.5 oz, drained and rinsed
  • 1 tsp olive oil
  • 1 tsp sea salt
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 3 Tbsp harissa mild or spicy
  • 1 Tbsp olive oil
  • 1 Tbsp fresh lemon juice
  • 1 tsp fresh ginger grated
  • 1 Tbsp honey
  • 3 cloves garlic minced
  • 1 tsp smoked paprika

Equipment

  • Aluminum foil
  • Baking sheet
  • Spiralizer or vegetable peeler
  • Mixing bowl
  • Sharp knife

Method
 

Cooking Instructions:
  1. Step 1: Preheat your oven to 400°F (200°C). This ensures that your salmon cooks evenly and thoroughly.
  2. Step 2: Cut four large pieces of aluminum foil, approximately 12 inches long each. This will be enough to wrap each salmon fillet and its accompaniments securely.
  3. Step 3: Place each salmon fillet on a piece of foil. Season generously with salt and pepper, allowing the natural flavors of the fish to shine through.
  4. Step 4: Using a spiralizer, create beautiful carrot noodles. If you don’t have one, you can use a vegetable peeler to create thin strips. Place the carrot noodles around the salmon fillets on the foil.
  5. Step 5: In a mixing bowl, combine the drained chickpeas, olive oil, sea salt, cumin, and smoked paprika. Toss to coat, then distribute the chickpeas evenly around the salmon and carrot noodles.
  6. Step 6: In a small bowl, whisk together the harissa, olive oil, lemon juice, grated ginger, honey, minced garlic, and additional smoked paprika. Drizzle this fiery mixture over the salmon and veggies.
  7. Step 7: Fold the foil over the salmon and veggies, tightly sealing the packet to keep all the moisture and flavors inside. Make sure there are no gaps for steam to escape.
  8. Step 8: Place the foil packets on a baking sheet and bake in the preheated oven for about 20-25 minutes. The cooking time may vary based on the thickness of your salmon fillets.
  9. Step 9: Once cooked, carefully unwrap the foil (watch out for the steam!) and serve the salmon, carrot noodles, and chickpeas. Top with chopped cilantro if desired for a fresh finish.

Notes

  • Salmon fillets can be used fresh or frozen for convenience.
  • Feel free to swap chickpeas for black beans or lentils.
  • Customize the heat level by adjusting the harissa used.
