Cooking Instructions:
- Step 1: Preheat your oven to 400°F (200°C). This ensures that your salmon cooks evenly and thoroughly.
- Step 2: Cut four large pieces of aluminum foil, approximately 12 inches long each. This will be enough to wrap each salmon fillet and its accompaniments securely.
- Step 3: Place each salmon fillet on a piece of foil. Season generously with salt and pepper, allowing the natural flavors of the fish to shine through.
- Step 4: Using a spiralizer, create beautiful carrot noodles. If you don’t have one, you can use a vegetable peeler to create thin strips. Place the carrot noodles around the salmon fillets on the foil.
- Step 5: In a mixing bowl, combine the drained chickpeas, olive oil, sea salt, cumin, and smoked paprika. Toss to coat, then distribute the chickpeas evenly around the salmon and carrot noodles.
- Step 6: In a small bowl, whisk together the harissa, olive oil, lemon juice, grated ginger, honey, minced garlic, and additional smoked paprika. Drizzle this fiery mixture over the salmon and veggies.
- Step 7: Fold the foil over the salmon and veggies, tightly sealing the packet to keep all the moisture and flavors inside. Make sure there are no gaps for steam to escape.
- Step 8: Place the foil packets on a baking sheet and bake in the preheated oven for about 20-25 minutes. The cooking time may vary based on the thickness of your salmon fillets.
- Step 9: Once cooked, carefully unwrap the foil (watch out for the steam!) and serve the salmon, carrot noodles, and chickpeas. Top with chopped cilantro if desired for a fresh finish.
Notes
- Salmon fillets can be used fresh or frozen for convenience.
- Feel free to swap chickpeas for black beans or lentils.
- Customize the heat level by adjusting the harissa used.
