Ingredients

For the Crust:
  • 1 cup vanilla wafers (crushed)
  • 2 tablespoons unsalted butter (melted)
For the Cream Cheese Layer:
  • 4 ounces low-fat cream cheese
  • 1 cup powdered sugar
  • 1 cup fat-free Cool Whip
For the Pudding Layer:
  • 2 ounces Jell-O vanilla pudding (two packages, each containing 4 servings)
  • 2 cups milk
For the Topping:
  • 2 cups fat-free Cool Whip
  • 2 medium bananas (sliced)
  • 2 tablespoons chocolate shavings or toffee bits

Equipment

  • Mixing bowls
  • Electric mixer
  • 9x9 inch dish
  • Spatula
  • Measuring cups and spoons

Method

Preparation Steps:
  1. In a mixing bowl, combine the crushed vanilla wafers and melted butter. Mix until the crumbs are evenly coated. Press this mixture into the bottom of a 9x9 inch dish to form a crust. Set aside.
  2. In another bowl, beat the low-fat cream cheese until smooth. Gradually add in the powdered sugar, mixing until well combined. Fold in 1 cup of fat-free Cool Whip until the mixture is creamy and fluffy.
  3. Spread the cream cheese mixture evenly over the crust in the dish. Be sure to smooth it out for an even layer.
  4. In a separate bowl, whisk together the Jell-O vanilla pudding mix and 2 cups of milk. Continue whisking for about 2 minutes until the mixture thickens.
  5. Pour the pudding mixture over the cream cheese layer, spreading it evenly with a spatula.
  6. Place the sliced bananas on top of the pudding layer. This adds a fresh, fruity flavor that complements the creamy layers beautifully.
  7. Top the banana layer with the remaining 2 cups of fat-free Cool Whip. Spread it out evenly across the top.
  8. Finish off your No Bake Banana Pudding Dessert by sprinkling the top with chocolate shavings or toffee bits for a touch of sweetness and texture.
  9. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight if possible. Chilling allows the flavors to meld and the dessert to set properly.

Notes

  • Feel free to use regular cream cheese if you prefer a richer flavor, but low-fat works well in this dessert.
  • For added flavor, consider drizzling a bit of caramel sauce over the top before serving.
  • This dessert can be made a day in advance, making it a great option for parties or gatherings.
  • Ensure the bananas are fresh and ripe for the best taste and texture.
