Ingredients
  

For the Base:
  • 200 g digestive biscuits (or graham crackers)
  • 50 g hazelnuts toasted
  • 50 g butter melted
For the Filling:
  • 150 g Nutella
  • 100 ml cream heavy
  • 600 g cheese cream cheese, full-fat
  • 4 medium eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons orange juice fresh
  • Grated orange peel
For the Orange Glaze:
  • 200 ml orange juice
  • 50 g sugar
  • 4 g gelatin
  • 4 tablespoons water
For Garnish:
  • 80 g dark chocolate
  • 50 g heavy whipping cream

Build Nutella Cheesecake With Oranges Step by Step
  1. Step 1: Prepare the Base
    Preheat your oven to 180°C (350°F). In a food processor, pulse the digestive biscuits or graham crackers until they resemble fine crumbs. Melt the butter and combine it with the crumbs and crushed hazelnuts in a mixing bowl. Stir until everything is well coated. Press this mixture firmly into the bottom of the springform pan to create an even base. Bake for about 10 minutes, then remove and allow it to cool.
  2. Step 2: Make the Cheesecake Filling
    In a large mixing bowl, combine the cream cheese, Nutella, and sugar. Using an electric mixer, beat until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Then, stir in the heavy cream, vanilla extract, orange juice, and grated orange peel. Mix until everything is fully incorporated and smooth.
  3. Step 3: Pour the Filling
    Pour the cheesecake filling over the cooled biscuit base, smoothing the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center still has a slight jiggle. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour.
  4. Step 4: Prepare the Orange Glaze
    While the cheesecake cools, prepare the orange glaze. In a saucepan, combine the 200ml of orange juice and sugar, and bring to a gentle simmer. In a small bowl, mix the gelatin with 4 tablespoons of water and let it sit for about 5 minutes to bloom. Once the orange juice mixture is warmed, stir in the bloomed gelatin until fully dissolved. Remove from heat and let it cool slightly.
  5. Step 5: Assemble the Cheesecake
    Once the cheesecake has cooled completely, pour the orange glaze evenly over the top. Chill in the refrigerator for at least 4 hours, or overnight, to set completely.
  6. Step 6: Serve and Enjoy
    Before serving, melt the dark chocolate with 50g of heavy whipping cream in a double boiler or microwave, stirring until smooth. Drizzle this chocolate over the cheesecake for a beautiful finish. Slice and serve chilled, garnished with additional hazelnuts or orange zest if desired.
