Ingredients
  

For the French Toast:
  • 4 slices thick bread of choice Sourdough recommended
  • 2 extra large eggs
  • 1/4 cup low-fat milk or almond milk
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon sweetener/sugar of choice
  • 1 tablespoon Nutella divided into 4 teaspoons
  • 4 tablespoons cinnamon sugar for coating

Method
 

Instructions:
  1. Step 1: Prepare the Filling - Divide the Nutella into four teaspoons. Set aside while you prepare the bread and custard mixture.
  2. Step 2: Whisk the Custard Mixture - In a large mixing bowl, whisk together the eggs, milk, ground cinnamon, vanilla extract, and sweetener until well combined.
  3. Step 3: Assemble the French Toast - Cut a pocket into each slice of sourdough bread, spoon in Nutella, and press the sides together.
  4. Step 4: Heat the Pan - Preheat a frying pan or griddle over medium heat, optionally adding a small amount of oil or butter.
  5. Step 5: Dip and Cook - Dip each stuffed slice in the custard mixture, then cook in the hot pan for about 3-4 minutes per side until golden brown.
  6. Step 6: Coat in Cinnamon Sugar - Immediately coat the cooked French toast in the cinnamon sugar mixture.
  7. Step 7: Serve and Enjoy - Plate the French toast warm, optionally drizzling with extra Nutella or sprinkling with powdered sugar.

Notes

  • Ensure the bread is thick enough to hold the Nutella without tearing.
  • Don't soak the bread too long in the custard to prevent sogginess.
  • Monitor the heat to avoid burning the outside while leaving the inside uncooked.
  • Coat in cinnamon sugar immediately after cooking for best results.
