Ingredients

  • 1/2 cup butter softened
  • 1/2 cup white sugar
  • 1/3 cup brown sugar packed
  • 1/2 cup creamy peanut butter
  • 1/2 teaspoon vanilla extract (or Beanilla Vanilla Paste)
  • 1 large egg
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats
  • 1 cup peanut butter and chocolate swirl chips (or your favorite chocolate chips)

Equipment

  • Mixing bowl
  • Electric mixer
  • Baking sheet
  • Cookie scoop
  • Cooling rack

Method

  1. Preheat your oven to 350°F (175°C) to ensure it’s hot and ready for baking. This step is crucial for achieving that perfect cookie texture.
  2. In a large mixing bowl, combine the softened butter, white sugar, and brown sugar. Using an electric mixer, cream them together until the mixture is light and fluffy. This should take about 2-3 minutes.
  3. Add the creamy peanut butter and vanilla extract to the creamed mixture. Mix until thoroughly combined, scraping down the sides of the bowl as needed.
  4. Add the egg into the mixture and beat until it is fully incorporated. This will help bind the ingredients together.
  5. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Once well mixed, gradually add this dry mixture to the wet ingredients, stirring gently until just combined.
  6. Gently fold in the rolled oats and peanut butter and chocolate swirl chips until evenly distributed throughout the dough.
  7. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto a baking sheet lined with parchment paper. Leave enough space between each cookie for spreading. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  8. Once baked, remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a cooling rack. This allows them to set perfectly. Enjoy your Oatmeal-Peanut Butter Chip Cookies warm or store them for later!

Notes

  • Try adding a pinch of cinnamon for a warm, comforting flavor.
  • For an extra crunch, consider adding chopped nuts like walnuts or pecans.
  • If you prefer a more robust peanut butter flavor, use crunchy peanut butter instead of creamy.
