Ingredients
  

  • 46 ounces salmon fillets
  • Salt to taste
  • ground black pepper to taste
  • 1 teaspoon cornstarch
  • 1 teaspoon water
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 cup fresh orange juice
  • 3 tablespoons honey
  • 2 tablespoons low-sodium soy sauce
  • 2 teaspoons minced fresh rosemary
  • Orange slices for garnish

Method
 

  1. Begin by rinsing the salmon fillets under cold water and patting them dry with paper towels. Season both sides with salt and ground black pepper to taste.
  2. In a small bowl, whisk together the cornstarch and water to create a smooth paste. In a separate bowl, combine the fresh orange juice, honey, low-sodium soy sauce, and minced fresh rosemary. Then, add the cornstarch mixture to the orange mixture and whisk until well combined.
  3. Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, carefully place the salmon fillets in the skillet, skin-side down. Sear for about 4-5 minutes or until the skin is crispy and golden brown.
  4. Once the salmon is seared, add the minced garlic to the skillet. Sauté for about 30 seconds until fragrant, being careful not to burn the garlic.
  5. Pour the orange glaze over the salmon fillets in the skillet. Reduce the heat to medium-low and let the glaze simmer for about 5-7 minutes, spooning the glaze over the salmon occasionally until it thickens and the salmon is cooked through.
  6. Once the salmon is cooked to your liking, remove it from the skillet and transfer it to a serving platter. Drizzle any remaining glaze over the top and garnish with fresh orange slices. Serve immediately and enjoy!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For freezing, wrap portions tightly in plastic wrap and place them in a freezer-safe bag.
  • Thaw frozen salmon in the refrigerator overnight before reheating.
