Ingredients
  

For the Crepes:
  • 2 cups pancake mix
  • 2 cups milk whole or plant-based
  • ½ cup grapeseed oil for cooking
  • 2 count eggs

Equipment

  • Mixing bowl
  • Whisk
  • Non-stick skillet or crepe pan
  • Spatula
  • Measuring cups

Method
 

Cooking Instructions:
  1. In a large mixing bowl, combine the pancake mix with the milk. Whisk them together until smooth.
  2. Add the eggs and grapeseed oil to the batter. Whisk until well incorporated.
  3. Heat a non-stick skillet over medium heat until hot.
  4. Lightly grease the pan and pour about ½ cup of batter, tilting to spread evenly. Cook until edges lift and bottom is golden.
  5. Flip the crepe and cook for an additional 30 seconds to 1 minute. Repeat with remaining batter.
  6. Fill crepes with desired fillings and enjoy!

Notes

  • Add a teaspoon of vanilla extract for extra flavor.
  • Keep cooked crepes warm in a low oven.
  • If batter is too thick, add a splash of milk.
