In a medium saucepan, combine water and butter over medium heat. Melt the butter completely and bring to a gentle boil, then remove from heat.
Add flour and salt quickly to the melted mixture. Stir vigorously until a smooth ball forms and pulls away from the sides of the pan.
Transfer the dough to a mixing bowl and let it cool for about 5 minutes.
Add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
Stir in the grated cheese until evenly distributed throughout the dough.
Preheat oven to 425°F (220°C). Pipe or scoop dough onto a parchment-lined baking sheet, spacing them 1-2 inches apart.
Bake for 20-25 minutes until golden brown and puffed up. Avoid opening the oven door during baking.
Remove from oven and let cool slightly on a wire rack. Serve warm or at room temperature.
