  • 5 cups mini marshmallows (10 ounce bag)
  • 6 cups Rice Krispie cereal
  • 1 cup chocolate chips semi-sweet or dark
  • 1 tablespoon coconut oil

Method
 

  1. Step 1: Prepare Your Dish - Grease a 9x13 inch baking dish with butter or cooking spray.
  2. Step 2: Melt Butter and Marshmallows - In a large mixing bowl, combine the unsalted butter and mini marshmallows. Microwave on high for 1-2 minutes, stirring every 30 seconds until melted and smooth.
  3. Step 3: Add Peanut Butter - Once melted, add the peanut butter and stir until creamy.
  4. Step 4: Combine with Rice Krispies - Gently fold in the Rice Krispie cereal until evenly coated.
  5. Step 5: Press Into Dish - Transfer to the prepared baking dish and press down evenly with a spatula.
  6. Step 6: Melt Chocolate - In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second increments until smooth.
  7. Step 7: Pour Chocolate Over Bars - Drizzle melted chocolate over the Rice Krispie mixture and spread evenly.
