Ingredients
  

  • 1/2 cup unsalted butter melted
  • 2 cups light brown sugar
  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Rolo candies unwrapped

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Line a 9x13-inch baking pan with parchment paper, leaving some overhang on the sides.
  3. In a large mixing bowl, whisk together the melted unsalted butter, light brown sugar, and creamy peanut butter until smooth and well combined.
  4. Crack in the two large eggs and pour in the vanilla extract, whisking until fully integrated.
  5. In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add this dry mixture into the wet ingredients, stirring gently.
  6. Gently fold in the unwrapped Rolo candies.
  7. Pour the blondie batter into the prepared baking pan and bake for 25-30 minutes, or until the edges are golden brown.
  8. Let cool in the pan for about 10 minutes, then lift out using the parchment and cool completely on a wire rack before cutting into squares.
