Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound ground turkey 94%
  • 1 large egg lightly beaten
  • ¾ cup seasoned breadcrumbs
  • ¾ cup pesto homemade or prepared
  • ½ cup finely grated parmesan cheese
  • Kosher salt and pepper to taste
  • 1 tablespoon olive oil for the baguette
  • ¾ cup pesto or more if you're really a pesto fanatic
  • 1 cup shredded mozzarella cheese for topping
  • Additional parmesan cheese for topping
  • Fresh basil for topping

Method
 

  1. Preheat your oven to 400°F (200°C) for even cooking.
  2. In a large mixing bowl, combine ground turkey, lightly beaten egg, seasoned breadcrumbs, ¾ cup pesto, parmesan cheese, salt, and pepper. Mix until just combined.
  3. Form the mixture into meatballs about 1 to 1.5 inches in diameter and place on a parchment-lined baking sheet.
  4. Drizzle meatballs with 1 tablespoon olive oil and bake for 20-25 minutes until golden brown and cooked through.
  5. While baking, cut the baguette in half lengthwise and spread remaining ¾ cup pesto on cut sides.
  6. Once meatballs are cooked, place them on the pesto-covered baguette and top with mozzarella and additional parmesan.
  7. Return the baguette to the oven and bake for another 5-7 minutes until the cheese is melted and bubbly.
  8. Let the melts cool for a minute, then garnish with fresh basil leaves before slicing and serving.

Notes

  • Feel free to substitute ground turkey with chicken or beef.
  • Make your own pesto for a fresher flavor.
  • For a gluten-free option, use gluten-free breadcrumbs.
