Ingredients
  

  • 18 oz cream cheese softened
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 cups freshly shredded sharp cheddar cheese extra sharp for more flavor
  • 14 oz jarred pimentos drained
  • 1-2 tbsp chopped pickled jalapeños
  • Green onions optional

Method
 

  1. Gather all your ingredients. Ensure your cream cheese is softened for easy mixing.
  2. In a large mixing bowl, combine the softened cream cheese, mayonnaise, and sour cream (or Greek yogurt). Use a mixer to blend until smooth and creamy.
  3. Sprinkle in the garlic powder, onion powder, paprika, dried oregano, salt, and pepper. Mix until evenly incorporated.
  4. Add the freshly shredded cheddar cheese to the mixture. Stir gently with a spatula to maintain a chunky texture.
  5. Carefully fold in the drained jarred pimentos and chopped pickled jalapeños. Adjust the amount of jalapeños based on your heat preference.
  6. Transfer the dip to your serving dish and refrigerate for at least 30 minutes to allow the flavors to meld. Garnish with chopped green onions before serving, if desired.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • Freeze for up to 2 months; thaw in the refrigerator before serving.
  • Can be made a day ahead to enhance flavor.
