Ingredients
  

  • 1 teaspoon lemon juice or vinegar for poaching water
  • 2 slices whole grain bread or sourdough bread or bread of choice
  • 1 medium avocado ripe
  • 1 teaspoon lemon juice for avocado
  • to taste Salt
  • to taste Black pepper
  • Sesame seeds, hemp seeds, and black cumin seeds optional
  • Optional toppings chili flakes, additional lemon juice, microgreens, feta cheese, cherry tomatoes, olive oil

Method
 

  1. Begin by filling a small saucepan with water, about three inches deep. Add the teaspoon of lemon juice or vinegar to the water. Bring the water to a gentle simmer over medium heat.
  2. While the water is heating, toast your slices of whole grain or sourdough bread until golden brown.
  3. Cut the ripe avocado in half, remove the pit, and scoop the flesh into a mixing bowl. Add the teaspoon of lemon juice and a pinch of salt and black pepper. Mash until you reach your desired consistency.
  4. Once the water is simmering, crack each egg into a small bowl. Carefully slide the eggs into the simmering water, one at a time. Poach for about 3-4 minutes for a runny yolk.
  5. Spread the mashed avocado generously over each slice of toasted bread. Place one poached egg on top of each slice.
  6. Sprinkle sesame seeds, hemp seeds, and black cumin seeds over your Poached Egg Avocado Toast. Add optional toppings like chili flakes or microgreens.
