Ingredients
  

For the Quesadillas:
  • 8 8-inch flour tortillas
  • 1 cup grated sharp cheddar cheese
  • 1 cup grated Monterey Jack cheese
  • ½ cup cooked black beans drained and rinsed
  • 1 red bell pepper stemmed, seeded, and diced
  • 4 scallions thinly sliced
  • ½ cup corn kernels thawed if frozen
  • 2 jalapeño peppers thinly sliced
For Serving:
  • Homemade Salsa or Salsa Verde
  • Pico de Gallo
  • Guacamole
  • Sour cream
  • Chopped fresh cilantro

Method
 

Directions:
  1. Step 1: Prepare Your Ingredients - Start by gathering all your ingredients. Grate the cheeses, rinse and drain the black beans, and chop the vegetables. Having everything ready will make the cooking process smooth and enjoyable.
  2. Step 2: Heat the Skillet - Place your skillet or griddle over medium heat. Allow it to warm up while you assemble your quesadillas.
  3. Step 3: Assemble the Quesadilla - On a clean surface, lay one tortilla flat. Sprinkle half of it with a generous amount of both cheddar and Monterey Jack cheese. Add the black beans, diced red bell pepper, sliced scallions, corn kernels, and jalapeño peppers. Finally, top with more cheese for that perfect melty finish. Fold the tortilla in half to create a half-moon shape.
  4. Step 4: Cook the Quesadilla - Carefully place the folded quesadilla in the heated skillet. Cook for 3-4 minutes on one side until it’s golden brown and crispy. Flip it over with a spatula and cook for another 3-4 minutes on the other side. The cheese should be melted, and the tortilla should have a nice, crispy texture.
  5. Step 5: Repeat - Repeat the assembly and cooking process with the remaining tortillas and filling until you have cooked all of your quesadillas.
  6. Step 6: Slice and Serve - Once cooked, remove the quesadillas from the skillet and let them sit for a minute before slicing them into wedges. Serve warm with your choice of salsa, pico de gallo, guacamole, sour cream, and chopped cilantro for added flavor.

Notes

  • For extra flavor, consider adding spices like cumin or paprika to the filling.
  • Make sure not to overfill the quesadillas, as this can make them difficult to flip and can lead to a mess.
  • If you prefer a softer quesadilla, you can cover the skillet with a lid while cooking to trap steam.
