- Step 1: Prepare Your Ingredients - Start by gathering all your ingredients. Grate the cheeses, rinse and drain the black beans, and chop the vegetables. Having everything ready will make the cooking process smooth and enjoyable.
- Step 2: Heat the Skillet - Place your skillet or griddle over medium heat. Allow it to warm up while you assemble your quesadillas.
- Step 3: Assemble the Quesadilla - On a clean surface, lay one tortilla flat. Sprinkle half of it with a generous amount of both cheddar and Monterey Jack cheese. Add the black beans, diced red bell pepper, sliced scallions, corn kernels, and jalapeño peppers. Finally, top with more cheese for that perfect melty finish. Fold the tortilla in half to create a half-moon shape.
- Step 4: Cook the Quesadilla - Carefully place the folded quesadilla in the heated skillet. Cook for 3-4 minutes on one side until it’s golden brown and crispy.
