  • 1 15-ounce can chickpeas drained and rinsed
  • 1 cup roasted red peppers drained and chopped
  • 1/4 cup tahini
  • 1/8 cup aquafaba
  • 2 tablespoons lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1/2 teaspoon ground cumin
  • to taste salt
  • to taste olive oil for drizzling on top
  • to taste paprika (optional for garnish)

Method
 

Directions:
  1. Step 1: Prepare the Ingredients - Start by gathering all your ingredients. Drain and rinse the chickpeas, and if you're using jarred roasted red peppers, ensure they are well-drained and chopped.
  2. Step 2: Blend the Base - In your food processor, combine the drained chickpeas, roasted red peppers, tahini, aquafaba, lemon juice, minced garlic, and ground cumin. Add a pinch of salt to kick-start the flavor.
  3. Step 3: Process Until Smooth - Blend the mixture on high until it becomes smooth and creamy. Stop occasionally to scrape down the sides of the bowl with a spatula to ensure everything is well incorporated.
  4. Step 4: Adjust as Needed - Taste the hummus and adjust the seasoning if needed, adding more salt, lemon juice, or garlic to your liking. If the hummus is too thick, add a bit more aquafaba until you reach your desired consistency.
  5. Step 5: Serve and Garnish - Transfer the hummus to a serving bowl. Drizzle a bit of olive oil on top and sprinkle with paprika for an extra touch of flavor and color.

Notes

  • For a nuttier flavor, try using sunflower seed butter instead of tahini.
