Ingredients

For the Broccoli:
  • 2 cup broccoli crowns thick stems removed and cut into florets, about 3 to 4 cups
  • 2 cloves garlic minced
  • 2 tablespoons olive oil for roasting
  • 1 tablespoon soy sauce
  • 2 tablespoons chili paste Sambel Oelek or sriracha
  • 2 tablespoons lemon juice
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Equipment

  • Large Baking Sheet
  • Mixing bowl
  • Spatula
  • Measuring spoons

Method

Preparation Steps:
  1. Step 1: Preheat your oven to 425°F (220°C). A hot oven is crucial for achieving perfectly roasted broccoli that’s crispy on the outside and tender on the inside.
  2. Step 2: In a large mixing bowl, add the broccoli florets. Make sure they are cut into uniform pieces for even cooking.
  3. Step 3: In the same bowl, combine minced garlic, olive oil, soy sauce, chili paste, lemon juice, salt, and black pepper. Stir well until the broccoli florets are thoroughly coated with the mixture.
  4. Step 4: Transfer the coated broccoli onto a large baking sheet. Spread the florets out in a single layer, ensuring they are not overcrowded.
  5. Step 5: Roast the broccoli in the preheated oven for 20-25 minutes, or until the edges are crispy and the stems are tender. Halfway through the roasting time, give the broccoli a good toss to promote even cooking.
  6. Step 6: Once roasted, remove the broccoli from the oven and let it cool for a minute. Serve it warm as a flavorful side dish or snack.

Notes

  • Use fresh garlic instead of garlic powder for an aromatic punch.
  • Let the broccoli marinate in the seasoning mixture for about 15-30 minutes before roasting for deeper flavor absorption.
  • Experiment with different chili pastes to find your favorite heat level.
