Cooking Instructions
  1. Step 1: Prepare the Shrimp - Start by cooking the SeaPak Shrimp Scampi according to the package instructions. Once cooked, let it cool slightly, then chop the shrimp into bite-sized pieces.
  2. Step 2: Mix the Creamy Base - In a mixing bowl, combine the softened light cream cheese, Dijon mustard, and half of the shredded cheese (1 cup). Mix until smooth and creamy.
  3. Step 3: Add Flavorful Ingredients - To the cream cheese mixture, add the diced roasted red bell peppers, minced onion, minced garlic, and the chopped shrimp. Stir until everything is evenly distributed.
  4. Step 4: Incorporate the Cheeses - Add the remaining shredded cheese (1 cup) and the Parmesan cheese to the mixture. Fold everything together gently until well combined.
  5. Step 5: Bake the Dip - Preheat your oven to 350°F (175°C). Transfer the dip mixture to a baking dish, spreading it out evenly. Bake for about 25-30 minutes, or until bubbly and golden on top.
  6. Step 6: Serve and Enjoy - Remove the dip from the oven and let it cool for a few minutes. Serve warm with your choice of dippers.

Notes

  • For a spicy kick, add a dash of cayenne pepper or red pepper flakes.
  • Drain and pat dry the roasted red peppers well to avoid a watery dip.
  • Experiment with different cheeses for variety; a cheddar and mozzarella blend works well.
  • This dip can be made ahead of time and refrigerated until ready to bake.
