Instructions:
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the olive oil, minced garlic, and chopped fresh rosemary or oregano. Add a pinch of kosher salt and fresh pepper to taste.
- Place the snapper fillets into a baking dish. Drizzle the herb mixture over the fillets, coating them evenly.
- Sprinkle Italian seasoned breadcrumbs over the top of each fillet.
- Place the baking dish in the preheated oven and roast for about 15-20 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
- Remove from the oven and serve immediately with fresh lemon wedges on the side.

- Store leftover snapper in an airtight container in the refrigerator for up to three days.
